mmm cheesy meaty cinnamony goodness. and relatively healthy to boot.
saute half onion and lots o' garlic until soft. add ~1 pound 90/10 ground beef and brown. add 4 oz tomato sauce, 2 teas cinnamon, salt, pepper, and simmer the crap out of it until reduced.
slice 2 graffiti eggplants [no need to salt or peel] and fry lightly until translucent.
bechamel sauce: melt 4 tablespoons butter, mix in 2 tablespoons flour until combined, add 2 cups soy milk, a pinch of nutmeg/cloves, 2 teas garlic powder, and heat until bubbly and thickened.
layer eggplant slices and tomato sauce like lasagna, top with bechamel and grated cheddar
bake at 350 for 45 minutes or until bubbly and browned. eat without burning self.
original recipe from god knows where and makes a 9x13 pan. my approximate halving of the recipe made 2 bread pans. ~4 servings. 3 if youre really hungry.
