5 cheese pasta bake

and relatively healthy to boot!
only relatively..cos there are still 5 varieties of cheese in this bitch.
beginning/optional step: make raviolis but only use half of available filling.  estimated ingredients:

1/2 C skim ricotta
1/2 egg yolk
5 oz frozen chopped spinach [thawed and well drained]
2 T parm

then boil noodles and stir everything together.  then realize... theres about 1/6th block of neufchatel cheese [low fat cream cheese - NOT NONFAT] in the fridge.  attempt to stir that in with the hot noodles.  smush into greased 8x10 pan
top with 1/2 C [or whatever is left in the bag] cheddar and 1/2 C mozzarella.  bake at 350 for 30 minutes and then broil for a bit so the top is nice and crispy.

look at that neufchatel sneaking in there like an inclusion [which i had to google cos i didnt pay attention in geology.  i first looked up "incursion"] of delicious creamy cheeseness.  so count them people.  1. ricotta, 2. parmesan, 3. neufchatel, 4. cheddar, 5. mozzarella. 

and spinach.  that makes it damn near a health food.
