as is often the case, i bought bananas with the intent of eating them. i forgot. and they got all nasty and spotty. whilst perusing the joy of cooking i came across a recipe for banana nut muffins. not a huge walnut fan and i dont actually have any in the house at the moment. plus 6 tablespoons of oil for 12 muffins seems a bit excessive and their alternative was a reduction to 2... without a reduction in dry ingredients. it sounded ...chalky. and gross. so i substituted greek yogurt.
dry ingredients:
2 C flour
2 teas baking powder
1/2 teas cinnamon
1/2 teas ground cloves
1/2 teas baking soda
1/2 teas salt
1/2 C dark chocolate chips
1/2 C almond slivers
mix dry ingredients and set aside
wet ingredients:
1 egg
3/4 C light brown sugar
2-3 mashed overripe bananas
5 T greek yogurt
2 T vege oil
1 teas vanilla
whisk wet ingredients until smooth. add dry ingredients and mix until just combined - will be chunky. divide into 12-cup muffin tin and bake at 375 for 18 minutes. cool 1-2 min in pan and then move to cooling rack.
look at that shit. perfectly done in the middle with melty chocolate chips. what wonders a decent oven can make. also a recent revelation [more of a duh... moment] my car runs quite a bit better on a full tank of gas as opposed to the half gallon i was trying to eke out over the past few days.
