wednesday i had people over for a somewhat impromptu and very disorganized taco night. the cookbook suggested "stir fried chicken tortilla rollups" but really i knew they meant ginormous chicken burritos. basically the chicken part was sauteed red peppers and zucchini, pre-roasted and chopped chicken, and medium-hot salsa - let simmer while frantically chopping 14 other things and serve. i forgot to mix up some taco seasoning [the premade kind is too salty] but it was surprisingly good without.
leftovers never go to waste, so i made a taco salad for lunch. ingredients from the top-down:
- cheddar
- corn salsa
- medium tomato salsa
- refried black beans [way better than pinto]
- cous cous/orzo/quinoa salad with some chipotle seasoning
- edamame
- chicken
unfortunately we'd eaten all the tomato, avocado, and olives. but all in all, probably the best lunch ive had since starting work.
