spaghetti squares

what to make with limited ingredients... the bastard child of mac and cheese!
all prepped in a [well greased] square muffin tin



1 box cooked spaghetti
2 T butter
2 T rice flour
1/2 pint cream
2 C buttermilk
1 egg
1 package shredded mozzarella
pepper

melt butter and stir in flour until just starting to brown.  smell cream and realize it has gone off.. throw away.   search desperately for soy milk that isnt chocolate or vanilla.  settle for buttermilk.  stir in, and while stirring madly, add egg being sure to mix fully before it cooks in stringy bits.  add cheese, and bring to a bubble.  stir in pepper [and salt maybe] to taste.  add spaghetti and end up with big globby blobby.  use tongs to separate portions into greased muffin tin.  spritz with olive oil to prevent extreme burning.  bake at 400 for 15 minutes or until crispy on top.
eat one.  yea right.  
two maybe.  if youre feeling particularly well behaved.  they would have been excellent topped with cheese.  damnit.
