once there were two sweet potato patties

..one was sweet corn and one was spicy thai.  they reluctantly made their way into my belly.  and all was good. 

sweet potato corn fritters
adapted from food network
  • 1 C cooked sweet potato
  • 4 T melted butter
  • 1 egg yolk
  • 1/4 C panko
  • 2 T flour
  • 1/2 C frozen corn
  • salt & pepper
  • canola for frying
smash/mix well, portion into 8 blobs
fry on both sides
cool, eat, and realize the little bastards should have breaded.  bahh. but according to a roommate, delicious with cranberry apple sauce



spicy thai sweet potato croquettes
adapted from a crafty lass

  • 1 cup mashed cooked sweet potato
  • 1 cup cooked rice
  • 1 T curry
  • 2 egg yolks
  • 1 T fish sauce
  • 1 T brown sugar
  • 1 fried shallot
  • panko for breading
  • canola for frying
smush everything together, scoop out 8 equal portions, flatten into patty and roll in panko.
fry the everloving life out of it
let cool to avoid hot lava
eat with thai sweet chili sauce
