quick chipotle chicken salad

pretty damn tasty looking, no?  well... its about to be mixed all to hell with some sauce plopped in.  but it tastes delicious!
  • whole roasted chicken [cos im lazy]
  • sunflower seeds
  • julienned carrots [again ..lazy]
  • hard boiled eggs
  • roasted leftover green beans
  • mayo [or miracle whip O_o]
  • chipotle ranch dressing
dice chicken [skin on if you like] into 1/4" cubes, mixing dark and white meat.  chop julienne carrots to shorter lengths [going for uniform size here].  chop eggs coarsely.  chop green beans to short lengths.  i portioned each layer into a tupperware so i could have a couple lunches premade, then dumped the tupperware into a larger bowl for mixing.  add about a quarter cup of dressing and mayo, and mix well.  add salt and pepper as necessary.  i like my chicken salad on the dry side so that was just enough sauce. 
refrigerate overnight for best flavor and dump over your boring plain lettuce for instant salad improvement.  while it probably wont lead to you looking like this, it will likely be a vast improvement to a regular salad.  and only moderately unhealthy. 

and just cos... if you zoom in far enough or angle yourself juuust right, any picture looks like it was taken in a nice organized setting.
