cupcake punks

i were in a gang or a band.. i'd want to be known as the cupcake punks.  but really, this post is about peanut butter steampunk sprinkled cupcakes.  6 of one, half dozen of another, eh?
in $1 spot michael's cupcake liners.  theyre cute and floral and yellow...which blends weirdly with the yellow cake and tan frosting.  its the thought that counts, no?

my workspace, complete with a half bottle of prosecco and my temporary roommate's "what the fuck should i make for dinner" cookbook, based on the eponymous website.
someone gifted me 500 cupcakes, which apparently is in a revised reprinted version now.  it has mixed reviews, but as ive only tried one recipe [vanilla cupcake.. exciting i know], so far, so good.  also, i finally got to use my steampunk sprinkles from the geeky hostess!  i supported tara's kickstarter a year or so ago, and have been hoarding my steampunk and tardis sprinkles since then.

aaand why did i take pics of scoops?  well i have been working as a server at a restaurant for the past 7 months, and ive learned portioning things out makes cooking/baking/eeerything that much easier.  
16 oz [blue] scoop for cupcakes and muffins, 3/4 oz [purple] scoop mainly for cookies, but also for frosting.  frosting is rather the bane of my baking existence, now that ive finally learned to follow directions.  but plop a blue scoop in each wrapper, bake that shit up, let it cool, and plop a purple scoop of frosting and schmear it around.  done.
all kitchen adventures are helped [not really] by alcohol; my roommate bought orange juice, and 2 unopened bottles of prosecco have graced my fridge since new years.. so 9pm mimosas natch. 
alllll done!  my only complaint.. the recipe has a yield of 18 cupcakes.  1 1/2 dozen.  i baaarely got a bakers dozen.  granted the one leftover in the silicone wrapper is a bit larger, so really, the recipe would have made 13.5 cupcakes in total.  however, for that amount of cakes, a small batch of peanut butter frosting was more than sufficient.  fortunately, since i also had to snag butter and eggs from the roommate.  good thing he likes to grocery shop.  i think i'll just give him cash and a list next week.

and just in case you were wondering, i googled peanut butter frosting recipes and then proceeded to make my own up.  no exact measurements here.
  • 1 stick butter
  • 1/3 container [small size] of peanut butter
  • powdered sugar
  • soy milk
cream butter and peanut butter until well mixed.  add powdered sugar and mix very slowly until the bowl is filled with weirdly crumbly sandy looking gunk.  pour in a small amount of soy milk, mix, and add more if necessary until actual frosting texture is reached and all sugary biznass is incorporated.  whip the shit out of the frosting until it lightens in color.  fin.
